Mark Gevaux, aka The Rib Man was a butcher by 15. You’ll find him down at KERB on Thursdays, Street Feast on Fridays, and Brick Lane every Sunday.
The Rib Man keeps it simple – cooking up baby back ribs in rolls and wraps, or as full or half racks. Add some infamous Holy Fuck or Christ on a Bike sauces if you dare.
When are you happiest? In my work life I am at my happiest around 2am in the morning when I have ribs cooking and my music banging!
What is the best thing about your job? Watching people’s reactions when they get to eat what I have been cooking all night!
What is the worst thing about your job? Changing weather. If I cook for a sunny day then it rains before lunch I am in trouble!
What is your greatest achievement? Being recognised by the YBFs and winning an honorary award in May
What is your favourite food? At the moment my favourite food is Indian street food, but anything spicy
What is the one thing you can’t live without? I suppose considering I eat it three times a day the thing I can’t live without has to be my Holy Fuck sauce and Christ on a Bike
What is your pet hate? Has to be tardiness and rudeness. Manners are free and are becoming a lost art
How do you relax? I relax by having the hottest bath! I love to do my thinking underwater
Who is your hero? I would say that Bobby Moore was always my hero. He loved what he did, knew how lucky he was to be able to do so and a very humble man
Who would you invite to your fantasy dinner party? Howard Marks (Mr Nice), Bobby Moore, Jamie Oliver, Vinnie Jones, Ray Winstone, and Pele
If you could be anywhere right now, where would you be? Anywhere in the world… LONDON BABY!!
