Street food: Behind the scenes at London’s KERB

Every week, street food markets, like London’s KERB, get into full swing serving quality lunches, desserts and drinks to hungry passers-by and food-fanatics from food trucks and tents. We’re only too accustomed to the final plate, but what of the prep that goes into getting this sought-after food to market?

There is so much unseen work associated with bringing delicious food to market. Whether it is marinading ingredients overnight, or the hours of preparation of lovingly prepared salads. We went behind the scenes at one of KERB’s Saturday markets at King’s Cross in London, to find out how traders prepare.
